How to Make Black Garlic Noodles at Home
Homemade Black Garlic Noodles

Black garlic, with its sweet and umami-rich flavor, can be transformed into a silky sauce to create unique homemade noodles. Follow this simple process to make your own black garlic-infused noodles.
Ingredients:
- 5-6 cloves of black garlic
- ½ cup water (adjust as needed)
- 2 cups all-purpose flour (plus extra for dusting)
- ½ tsp salt
Instructions:
- Prepare the Black Garlic Paste
Steam the black garlic cloves for 5-10 minutes until softened. Transfer them to a blender, add water, and blend into a smooth, runny paste. - Mix the Dough
In a large bowl, combine flour and salt. Gradually pour in the black garlic paste while mixing until a shaggy dough forms. - Knead the Dough
Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. If sticky, add a little more flour. - Rest the Dough
Cover with a damp cloth and let it rest for 30 minutes to relax the gluten. - Roll & Cut the Noodles
Roll the dough into a thin sheet, dust with flour, then fold and slice into your desired noodle width. - Cook & Serve
Boil in salted water for 2-3 minutes. Enjoy with broth, stir-fries, or a simple drizzle of sesame oil.
