How to Make Black Garlic Noodles at Home

Homemade Black Garlic Noodles

Black garlic, with its sweet and umami-rich flavor, can be transformed into a silky sauce to create unique homemade noodles. Follow this simple process to make your own black garlic-infused noodles.

Ingredients:

  • 5-6 cloves of black garlic
  • ½ cup water (adjust as needed)
  • 2 cups all-purpose flour (plus extra for dusting)
  • ½ tsp salt

Instructions:

  1. Prepare the Black Garlic Paste
    Steam the black garlic cloves for 5-10 minutes until softened. Transfer them to a blender, add water, and blend into a smooth, runny paste.
  2. Mix the Dough
    In a large bowl, combine flour and salt. Gradually pour in the black garlic paste while mixing until a shaggy dough forms.
  3. Knead the Dough
    Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. If sticky, add a little more flour.
  4. Rest the Dough
    Cover with a damp cloth and let it rest for 30 minutes to relax the gluten.
  5. Roll & Cut the Noodles
    Roll the dough into a thin sheet, dust with flour, then fold and slice into your desired noodle width.
  6. Cook & Serve
